miss me?









vacation is over
aWeSoMe!
if it weren't for my sister being here
it would have been a total bust.
rained all week,
four days of fevers on three different people,
our lg washing machine decided not to work,
flooding our basement...
we had hurricane winds,
lost power,
pms.
it sucked.
out.loud.sucked.
zoe and i took a weeks worth of laundry to a local Laundromat.
i fell in love.
do i dare say it was pretty?
it inspired me big time
for this i was grateful because i've been uninspired all week!
here's to a new month
i need a clean slate!

Bean...







Dropped the big girls off at the art studio this morning.
Afterwards Stella and I stopped into our little towns coveted coffee shop, The Black Bean.
Good coffee...very good coffee :)
We shared a plate of eggs and homemade toast...mmmmm.
Stella was being silly.
The guys out front were hard at work on their machines making us a new sidewalk.
Stella was fascinated.
We watched for at least twenty minutes.
Hopped in the car and headed out to do some errands.
Stella thought she was blowing bubbles...see?
Would you look at that horrible rash on her chin? :(
Overall a nice day.
I did get a call from the art studio around noon and had to go pick Ruby-Doo up early.
My sensitive little girl got her feelings hurt and just couldn't stay.
Apparently an older girl...very snotty like told Ruby she was sitting in HER chair.
The Mama lion in me wanted to go down there ready to kick some a$$.
Instead I went down there, gave Ruby a big hug and tried like honey not to make eye contact with any of the other little girls sitting around the table.
Lightening bolts could have very likely shot out of my eyeballs, zapping the guilty snot princess.
Anyhoo...done.
It's going to get into the 80's this weekend!!!
Can't wait.

A quick little post...

Just in case you've forgotten (cause I almost did ;) The kiddlets are on vacation this week so the little bit of free time I count on when they're in school has evaporated. Things will be back to normal next week...ahhhhh.

I've felt so unproductive all week!!! I'm ready to get back into the swing of things! I made the cutest tee today! I'll post tomorrow. The light was gone before I was done so you'll just have to sit tight.

Here's that recipe ladies...
To make a lighter version you could bake these on a cookie sheet at 425 until they look lightly browned. You could also use corn flake crumbs, panko, a gluten free bread crumb or wheat germ to replace traditional bread crumbs :)
1 or 2 eggplants sliced thin (long or circles...up to you!)
Bread crumbs mixed with light salt, pepper, any spices you like and grated Parmesan cheese.
2-3 eggs mixed with a splash of water.
Flour with a hint of salt and pepper.
Olive oil for pan frying.
Loaf of good crusty bread.
Mayo mixed with 1 minced garlic clove, splash of lemon juice, any spices you like.
Roasted red peppers...I use the kind in a jar :)
Fresh mozzarella cheese.
Dip the eggplant in the flour mixture, then egg mixture and lastly the bread crumb mixture. Fry until lightly browned on both sides. If you're baking place them on a parchment lined cookie sheet to omit the use of olive oil. Turn to get both sides nicely browned.
I usually use either an Italian or French loaf of bread sliced horizontally. I place the eggplant then the roasted red peppers and then the cheese on one side. Toast in the oven until the cheese is melted. Make sure you put the bread that doesn't have any toppings into the oven to toast too! When done, load on that mayo mixture...it really makes the sandwich delish!

please help me...

Welcome the newest members of our family!
That's Goldy (even though he's purple. Oh and even though it's a boy beta Ruby chooses to call him a girl :) I could take photos of Stella's and Zoe's fish but they all look the same. Stella named hers Goldfish and Zoe's is Finz. Thanks Anthony and Jeanne for the Christmas dough...this is what they wanted!!!



Now for the latest:
  • Disney On Ice - Water $4 each, Hot Dogs $6.50 each, Minny Mouse Stuffy $12 each, Cotton Candy (I don't know Grammy bought that but I'm sure it was as inexpensive as everything else ;), Parking $20, Tickets $32 each. The girls were into it to a point but then I think they just zoned out. I thought the show was as cheesy as they come and found myself laughing when I wasn't supposed to be. I don't think I can even write what I was thinking because I wouldn't want to offend. I'll just say that it's hard to believe there were grown men wearing some of those costumes :O
  • I ate lemon cookies for breakfast, chocolate pudding for lunch and a pickle for snack. No, I'm not pregnant. Quite the opposite.
  • I've been going to bed WAY too late and getting up WAY too late. I hate that.
  • I'm putting the finishing touches on my resume and about to seriously go job hunting.
  • My old GM from Mistral made me tear up this morning from a sweet email he sent me. Gates, you are one to admire.
  • School starts back in six more days...but who's counting?
  • I'm working on an order right now and hope to have some new designs in the shop by the end of the week.
  • I'm predicting a Migraine in less than two hours. Yeah, yeah, I know...it's the sugar+hormones=pain
  • I feel like the laziest person on earth when our schedule is interrupted by things like v.a.c.a.t.i.o.n. I need the constants in life.
  • I'm making eggplant cutlet sandwiches for dinner with roasted red peppers, mozzarella, garlic & herb mayo on toasted rolls. Craig's favorite!
  • I hate New Year's Eve.
  • However, I am looking forward to a new year!
  • OK. back to work.

so much to do...

and so little time to do it! today has been a crazy nutty day...one i'd rather dismiss entirely. you can read about that over at my new blog devoted entirely to me whining here. i'll try and keep 'i love plum' light and colorful and devoted to all things lovely :)

i had a TON to get off my chest (dirty laundry) so have used up my puter time to getting my therapy off the ground.

we're back from the cape and had a great time beaching it and getting eaten by bugs...maybe some of my cape post should be over at my other blog ;) got home last night and we've been straight out all day...tomorrow should be no different. guess who's turning 8 tomorrow????? can't believe my baby is 8!!!

this is a quickie just to let you know i haven't forgotten you and am so grateful you check on me!!! things should quiet down in the next couple of days and i'll post something with quality. till then i'll leave you with a couple of pix! xo
